Satay chicken, roast pumpkin and capsicum wrap.

The outcome from some leftover satay sauce. It shouldn’t technically be here because I used a pre-made sauce… but it was quite nice and I’ll do it again from scratch one day. Was quite lovely, I think it would be nice with some rocket though… Recipe below:

Satay Chicken, Roast Pumpkin and Capsicum Wrap

Ingredients:

  • Clove of garlic
  • Capsicum
  • Pumpkin
  • Chicken breast
  • Satay sauce
  • Wrap

Method:

  1. Marinate the chicken breast in satay sauce overnight.
  2. Cut pumpkin and capsicum into similarly sized pieces and roast with the clove of garlic.
  3. Pan fry chicken in satay sauce.
  4. Place on wrap with roasted vegies with as much left over sauce as is left.
  5. Wrap and enjoy!
