The outcome from some leftover satay sauce. It shouldn’t technically be here because I used a pre-made sauce… but it was quite nice and I’ll do it again from scratch one day. Was quite lovely, I think it would be nice with some rocket though… Recipe below:
Satay Chicken, Roast Pumpkin and Capsicum Wrap
- Clove of garlic
- Chicken breast
- Satay sauce
- Marinate the chicken breast in satay sauce overnight.
- Cut pumpkin and capsicum into similarly sized pieces and roast with the clove of garlic.
- Pan fry chicken in satay sauce.
- Place on wrap with roasted vegies with as much left over sauce as is left.
- Wrap and enjoy!
