Lamb and Tzatziki inspired Wrap

I had a day worth of lectures today, and let me tell you, I’m no longer equip with the attention span needed to sit in a lecture theatre and listen to 7 hours of talking. I’m sure at one point I was… I remember a time where I was quite a dedicated student. Now all I want to do is put things into practice and learn with my hands on. I miss spending time with kids encouraging them to stand up tall or teaching them to move in new ways. I miss musical play and pretending we are rolling over a sea whilst transporting elephants to their homes. It’s not for long I know. In 6 short months I will hopefully be starting a job doing just that. However, this food blog is about the way I made it through these 7 hours of lectures- by thinking about what I was going to cook for dinner. I considered a tuna salad, but too boring. I thought about miso soup with tofu and seaweed, but not filling enough. When we had a lecture on dietetics which mentioned fatty acids I considered atlantic salmon with a balsamic reduction, or sandwiches with a lemon cream cheese with capers and smoked salmon- but I wasn’t in a fishy mood. And then I hit it- a lamb and tzatziki wrap. Now it’s not true tzatzki- I took a few million liberties, but it’s lovely all the same- just a little messy to eat!!! Next time I’ll add dill (thanks Master Chef) And I forgot to take photos because I was HUNGRY and all that was left was a plate! My own recipe below.

Lamb and Tzatziki inspired Wrap

Ingredients:

  • 100g lamb, diced
  • 1/4 cup Greek yoghurt
  • 1 small Lebanese cucumber
  • squirt of lemon juice
  • Ground cumin
  • Salt to taste
  • 1 tomato
  • 2 wraps

Method:

  1. Put the lamb on a medium heat on a non-stick frying pan
  2. While the lamb is cooking, mix the greek yoghurt, cumin, salt and lemon juice.
  3. Dice the cucumber and add to the yoghurt mixture.
  4. Slice the tomato and lay on the wraps.
  5. Place the lamb along the tomato and pour yoghurt mix over.
  6. Wrap and enjoy!

Delicious! I wish I could make the dressing thicker but I’m not sure how… I shall experiment 🙂
