Magic Chicken and Corn Soup

Sometimes you are lucky enough to be surrounded by people who love you and will make you chicken soup when you are sick. Sometimes, although these people love you, they are more metaphorically close than physically close and if you want chicken soup, you have to get out of your sick bed and cook it yourself. I have a standard chicken and corn soup that I like and I added a few vegetables for extra nutrients. Now I’m just waiting for the magical properties to kick and and make me feel 100% again!

Magic Chicken and Corn Soup

Ingredients:

  • 2 chicken legs plus one thigh
  • 2 cups chicken stock plus extra water
  • 1 can creamed corn
  • 2 big tablespoons ginger
  • 1tbsp soy sauce
  • 1 carrot
  • 1 parsnip
  • 5 spring onions

Method:

  1. Put the stock on to boil and add the chicken legs
  2. Chop the parsnip and carrot into equal sized pieces
  3. Chop the spring onions, separating the whites and green
  4. Add the parsnip, carrot, white portion of spring onion, half the ginger, soy sauce and creamed corn to the stock and simmer for one hour, stirring occasionally
  5. Slice the thigh thinly and add with remaining ginger and most the green spring onion to the soup, continue simmering until chicken is cooked
  6. Place the last of the green onion in a bowl and pour the soup on top

Voila, extra tasty chicken soup. Along with liters of orange juice and the raspberry jelly I’ve got for dessert, this will help you feel better in no time!
